The third in our series of wholesome five minute repasts for busy bothered shopkeepers. There is of course nothing stopping busy firemen or harassed hairdressers or hungry housewives or jolly judges making these dishes too.
Today’s recipe is about as healthy as it gets (well, apart from the sausage, that is): it buys you a get-out-of-gym free pass, and will permit you to smile in a superior fashion at your customers for the rest of the afternoon. It is also mega-thrifty: cooked beetroot is about 49p for a pack of 5 at Lidl at the time of writing, and the other ingredients are leftovers or household staples.
Sausage and Beetroot a l’Orange
You will need:
- 1/2 red onion, sliced
- 1/2 red pepper, chopped
- 1/2 teaspoon chopped ginger
- sploosh of oil (sesame would be best)
- 2 small cooked beets, chunked
- 1/2 orange, peeled chopped*
- 1/4 apple, cored and chopped*
- 1 leftover cooked sausage**, sliced (leftover gammon is also good, or you can just leave the meat out)
- S + P
Popped your ‘Back in 5 Mins’ sign on the door? All you do is to fry the onion, pepper and ginger in the oil. Stir for a couple of mins, and then add the beetroot, orange and apple. Sizzle for a minute or two more, and then add the sausage. Cook for a further minute or until the sausage is piping hot, season to taste, tip into a bowl, and enjoy with your bread of choice (rye bread is good with this). Don’t forget to re-open the door for your customers…(easily done).
*You will of course eat the rest of the fruit on your afternoon ‘break’.
**Mrs. S. says that this just has to be a Black Farmer sausage. If you have tried them you will understand. They are truly and simply the best.
